ARTISAN PASTA:
It is produced locally with 100% Tuscan organic grains ground at a very low temperature to preserve their best nutritional quality. It is a type of pasta that is rougher and more porous and absorbs 30% more seasoning than smooth pasta, thanks to the processing with bronze drawing at a low temperature and a slow drying process to not alter the nutritional properties of the grain. This type of processing allows the gluten and “live” starches to be kept in their natural state, thus promoting a higher digestibility of the pasta.

RICE:
Our organic Carnaroli rice is an excellent product grown in Maremma and handcrafted in stone. It represents a prized long-grain variety, the queen of risottos. It is the fruit of a cultivation that respects nature and a passionate Tuscan rice-growing tradition. The taste is aromatic and delicate, with slightly toasted notes. This rice remains al dente even after a long cooking time.
